I love old cookbooks….I think it is mostly because the majority of the recipes have in their ingredients at least 1 cup of lard, which I find hilarious.

Even though the majority of recipes in those old cookbooks have ingredients like “1 cup of lard”, there wasn’t a great deal of the population that seemed to suffer from obesity as the population does today.

Was it the ingredients that changed? Was it the lifestyle that changed? Or was it some blend of the two that has caused 75% of men, 60% of women, and about 30% of children to be considered obese?

Personally, I think that the cause is a blend of the two.

Have the ingredients changed?

When I am at the grocery store, I don’t buy a lot and I cook just for myself. I try to keep my food budget to $85 for two weeks and try to have a per meal cost of no more than $5. To keep it interesting, I try to make it a game when I get the receipt by trying to make the “savings” box be at least half of the amount that I spend.

I have used the $85 budget for about 3 years, but given the cost of things at the grocery store, I either need to increase that by $5 for every 2 weeks or become more “Suzie Homemaker”.

For the little quantity that I am able to get for that $85, I can easily spend about 2 hours in the grocery store. Most of that time is spent meticulously reading the ingredients labels and nutrition facts on the labels.

The average American diet is abysmal at best. Most of the meals we consume aren’t very nutritious, but they are convenient. These meals have high levels of sodium – one meal alone could easily contain the daily recommended sodium intake – and we eat 3 of those, wondering why there are continuing cardiac and blood pressure issues running rampant in the country.

For the past 2 or 3 years, I have been making an effort to reduce the sodium content of what I buy to the best of my ability by:

  • Buying canned items with “reduced sodium” on the label
    • Don’t just blindly buy the can with this on the label
    • Grab the ones with and without the label of various brands and compare the nutrition facts and ingredients to find the best option for you
  • Compare the “heart healthy” cans with the “reduced sodium” and the cans without such labels
    • We all live busy lives and branding/marketing specialist know this – they can easily take advantage of you with those “helpful” labels, but when you compare the nutrition facts and ingredients on the label, it is not always the case.
  • Consume home-made meals as often as possible and reduce using the drive through or delivery service as your oven.
    • By controlling what you consume down to the ingredients, you have greater control of what and how much goes into your body by comparison to what you get at restaurants, drive thru’s, and delivery.
    • The per-meal cost is usually lower and you can re-heat the leftovers or bring them with you to school or work in a lunch bag.

Beyond my attempts to reduce the sodium content of my daily diet, for the past year or so, I have also made the conscious decision to eliminate High Fructose Corn Syrup and GMOs from my diet as well. This easily has eliminated at least 50% of the items you find on the shelves of your local grocery store, including items that are the store brand.

By eliminating these items from my diet, it further reduces the “ready to go” options available to me – like microwave popcorn, cereals, most frozen pizzas, sandwich breads, most (if not all) microwave meals and various boxed frozen foods, many ice creams, canned soups, juices, and salad dressings.

Now, your research and understanding is likely different from mine, and that is alright – you can certainly eat what you want. But from the research I have conducted, it seems like we have more food-like products than actual food on the grocery shelves these days and because they are food-like products, our bodies have difficulty utilizing the lack of nutrition properly, which then causes a number of the health issues we experience today.

Have our lifestyles changed?

Essentially, since the 1960’s the general lifestyle has changed. Women moved out of the lifestyle of being housewives and into the general working population as a result of the Feminist movement and (I think) also due to the increasing levels of divorce.

Before this time, being a housewife was a normal expectation and calling. These women were able to maintain the homes, raise the children, and cook meals that were healthy, nutritious, and cost-effective.

The number of women that choose to be, or are able to be, housewives has drastically decreased because it takes both spouses to be able to bring in paychecks to cover the expenses. Even then there can be too much month at the end of the money and then there is the normal housework that needs to be done to just maintain normal operations.

As a single female, there are days I look around my house, which is chaos at best. By the end of the day, I have very little (if any) energy or desire to do any housework, but if I don’t do it, it doesn’t get done. There are many times where I think to myself I need a housewife – and I am completely serious. It would be wonderful to have my house clean and organized with dinner waiting on the table for me.

Instead, there are piles and papers everywhere, boxes (yes plural) of papers that need to be shredded that grows faster than I can run it through the machine, dinners made later than I would like because I haven’t eaten all day and lost track of time, using vacation time as a week to deep clean my house so I can live like a human instead of the guardian of the trash heap. If I can remember to vacuum once a week, it’s a win. There are more times than I am willing to admit where laundry was done past midnight, dishes were being washed and garbage was being taken out because of a late day at the office and they all had to get done before I had to get up in a few hours and head back to work.

Life is chaotic and busy and over-scheduled and stressful these days – everyone needs everything now or yesterday and productivity and efficiency are the buzzwords of society.

In this kind of environment, especially cooking for one, it’s far easier to use the drive thru for dinner than it is to make a dinner. You easily spend more time making it and cleaning up after it than you spend actually eating your meal. We make the choice of what is more valuable – our time or our money; the answer is usually our time and we pay a higher per-meal price for drive thru meals that lack nutrition so we can get on with our day and be the productive, efficient person society expects us to be.

How to start meal planning

There are many who have made meal planning and prep an art form – to the point where their skills can make one feel completely inadequate in more ways than one.

My suggestion: Aspire to that, but don’t expect that level immediately

If you are like me, I cook for one and eat one “large” meal a day with some snacking throughout my day (if I remember). I have a couple of cookbooks and recipes that I have collected, but the majority of them are created for at least 2 servings. Given my eating habits, I could potentially be looking at having to commit to a meal for at least 2 to 4 days (assuming I can eat it all before the leftovers go bad).

I don’t have one yet, but my goal at some point, is to have a large freezer that I can put in my garage. Aside from stock-piling half-gallon ice creams and food for my bird, I hope to use it to have some meal prep things that I can turn into a meal that doesn’t have the epic sodium levels or the high fructose corn syrup or GMO additives.

Bulk Buying

One of the ways I have found to save some money is bulk buying and freezing what I can. You can get a membership to Costco, Sam’s, or BJ’s and can usually save at least the monthly membership within 3 months depending on what and how frequently you buy.

On a recent trip to Sam’s, I got 6.67 lbs of chicken breast, 32 oz Half and Half, and 24 soft taco shells for about $16. That total was less than half of what I would have gotten just the chicken for at my local Publix.

If you are part of a bulk buying location like Sam’s….remember to ALWAYS be mindful of the per ounce, per square foot, or whatever the unit of measure cost is. Just because it is in a bulk buying location, doesn’t mean you are actually saving on certain items.

Given this, take the time to find and price compare at different stores on your general routes. For example, there is a Publix near my house that sells bananas for 65 cents a pound. Another Publix on my typical route has bananas for 49 cents a pound. Same company, same product, different locations, different prices.

Know what you typically purchase and keep an eye on the prices in the various locations so you can get the best deal. However, be mindful as well of the gas and vehicle cost to go to all these places. That could very well make the savings in the food purchase obsolete based on the vehicle usage and gas it took for that special trip to that location.

Meal Planning and Preparation

Being a millennial, we hear a lot about how my generation (and likely Gen Z) have issues with what is called “Adulting”. I think part of this is because many of our parents brought us to the McDonald’s drive thru or whatever restaurant had the best deal, because our parents are likely working 40 hours a week, divorced and don’t have the time or energy to cook – so we, in turn, never learned how to cook an actual meal. Granted, we can put something in the microwave an nuke it for a few minutes and we might be able to figure out how to cook an egg or pasta, but that is the general skill level of these two generations….but I do realize there are some that actually know how to cook meals – they are the exception.

I am hopefully one of those exceptions because I can cook at least 3 or 4 other meals pretty decently outside of eggs and pasta. But I know how to follow a recipe if I need to do something more adventurous. Since the majority of my cooking is for me, I keep it pretty basic and as easy as possible.

There are certain things that you should keep in your kitchen pantry at all times, mostly spices.

To begin your meal prep and planning, you need to know:

  • How many people you are cooking for
  • How many meals you are making for each
  • How many days for each person and number of meals you are cooking for
  • What preferences, dislikes, allergies, etc. that need to be considered for each person

For example, when I make something like Chicken Quesadilla or Chili, I like it a bit spicy sometimes. If my mom is over, who doesn’t do spicy things, I need to be able to have that in my consideration so that the base of the meal isn’t that spicy, but other aspects can be customized to the “spicy” preference of each person consuming the meal.

Since variety is almost essential in meals, it’s best if you can find multiple recipes that use as much of the same ingredients as possible – like making enough variety for everyone’s meals for a week that has a base of chicken or beef. Everything else is different based on vegetables, spices, rice or pasta, etc.

By preparing as many meals as possible with similar ingredients, you are able to buy in bulk and if you do it right, can reduce the overall cost per meal per person to boot.

Start simple and work your way up.

I mean, I don’t want to tell you how to run your website, but what if you added something that grabbed folk’s attention? I mean BLOG_TITLE is a little plain. You should peek at Yahoo’s front page and see how they write news titles to grab people to open the links. You might add a video or a related picture or two to get people interested about everything’ve written. In my opinion, it would make your website a little livelier.|

    1. I have seen many sites and forums around the internet on the topic of meal planning and other aspects of survival. The meal planning sites are generally mom’s blogging from what I have mostly come across. Most of the survival websites I have seen seemed to be more for hard core survivalists and military types.
      That is why I created my site – I thought there was a need for a more practical way of going about survival prepping for those just starting to get into it.

      I think it’s more important now as at the time of this comment, the USA and I think Europe at least are in a recession. Many sources I listen to are starting to talk of a depression coming – like the one in the 1930’s, some say what is coming could be worse than that depression.
